I don't really play games on my mobile (and don't own a tablet) so I can't speak to how well it'd play in that environment, but yes you basically click orders rather than control directly.  You do have the option to take direct control of a dwarf, but it's not terribly useful besides getting them out of situations that the AI is struggling with.

Edit: on the development front, they just added a beta version on Steam which adds animal farming and gargoyles as a flying enemy type, so it does seem they're continuing to add to the game post-release, though I dunno how quickly that'll go.
