If local multiplayer is an option, I highly recommend Starwhal and Wrestle Jump, they're both fairly hilarious physics based fighting games.

Might I recommend AI War: Fleet Command? There's a topic about it here.

I was trying to use the ellipses to imply that it wasn't actually all that much like Minecraft. I dunno why I always forget about Castlevainia D:
Curse you, foul ellipsis! Ellipses killed my family with their cruel vagueness!  ;)

Pax britannica.

A one button RTS game.

Somewhat simple but kinda fun (Hot seat only) and it's free so no harm in trying it.

I know a lot of couples duo run Dungeons and Dragons Online. All but a tiny amount of content can be run with two people with the option to run with larger groups if you feel like it. Free-to-play but worth putting a little money into for extra content (which can be earned slowly by playing).

My wife and I have had fun with the following games, which have coop. Like someone else said, it helps if whoever you're playing is at least your playing level. Sometimes it gets frustrating to lose every game because you want to play with someone ;)

- Orcs Must Die 2 is pretty nifty
- Dungeon Defenders is pretty nifty too, but has a metric crapton of DLC
- League of Legends
- Awesomnauts, 2d MOBA that works surprisingly good. This game needs more love, plus it's cheap. Also, it's awesome! And all DLC is just cosmetic.
- Dawn of War 2 was OK as well. You can divide what units you are using and then picomicromanage just two squads while the other person picomicros theirs. The only problem is GFWL....
- Titan Quest was pretty nice too!
- Minecraft, Terraria, et al, if she likes that kind of gameplay can be pretty interesting :)
- Dawn of War 1 + expansions if she's into RTSs, can be done coop :)

I'll come back if I remember more!

Cortex Command
What other game allows you to use a rocket to deliver your goods, and then lets you crash said rocket into the enemy?

Technically it's a singleplayer experience but I know more than a couple of couples who have enjoyed playing through Telltales' The Walking Dead. It is infinitely better than the sorry excuse for an adapted tv series of the brilliant comic book. I guess it really depends on if you want your girlfriend to see you cry or not  :P

Also, I second Cortex Command. I am totally burnt out on the small selection of singleplayer options it has to offer but as a pure couch co-op it freaking kicks all kinds of a$$.

Because let's be honest: you WILL cry. Like the metaphorical bitch :P
