Objective RP reasoning: It could be, or it could be a slow-acting poison that numbs our nerves and slowly but surely asphyxiates us. Behaves like alcohol, which would be counter-productive if consumed.

Meta-gaming: the DM suggested it could just have shared effects, we're dying of thirst & we're playing a game where we're not likely to spontaneously drop dead, (yet).

If we're playing hardcore-mode, don't drink it. If we're using knowledge our character doesn't have, go for it. Woo divergent actions!

and we shouldn't have any more of that sap at all. why on earth would it being hallucinogenic be a good thing?

I dont care if it makes us drunk or hallucinate or whatever. it is messing with our head, and we can't afford that right now. have nothing to do with it.

If we are really that thirsty, and our mind is already compromised, we are probably going to drink the thing on autopilot. And a plant person eating a vine is like a human eating a crab... The dehydration effect of alcohol is due to alcohol being alcohol, there is no reason to believe that the magical vine juice will dehydrate us, and less to believe that it will dehydrate us more than it hydrates us...
