In Dark Souls, it was possible to simply not interact with the MP element. Granted, by doing so you were taking a hefty penalty to all kinds of stuff, but that's the point where PvP and PvE separated.

Now, that's not true anymore. The chance of being invaded may be low while Hollow, but it's there. You could argue that Dark Souls was a SP game with opt-in PvP and Co-Op. You can't really say that about Dark Souls 2. It's a PvE game with unavoidable PvP. Dark Souls used being alive as a carrot to get you engaged in PvP elements and the larger game space. Now it's both a carrot, and a stick for people like me who just shrugged off the bonuses in the name of not being bothered.

So now instead of jumping off a cliff after kindling a bonfire I have to sit around and wait for a troll to come along, then jump off a cliff to reset the invasion timer.
Then if I'm in the middle of doing something and a troll comes along, I have to stop what I'm doing and jump off a cliff.

Just play it offline if you're that bothered, don't intentionally hinder the enjoyment of others.

Is there an offline option?
Every time I got invaded in DS1 it was... dumb, to say the least, so I just stopped bothering.

Well, one of the reasons that the Dark Souls and Demon Souls multiplayer components were just not fun is that they depended on twitch reflexes in a game with sometimes very noticeable lag. From what I hear though, the Dark Souls 2 Multiplayer has been revamped enough that I think I'll enjoy playing it with a partially PvP focus since parrying suddenly turns viable, and backstabs aren't as easy to land. Stuff like that makes all the difference in what it takes to enjoy the game, and well, losing health when Hollowed sounds an awful lot like what Demon Souls did anyway. Judging by that, there would likely be a way to mitigate the effects of losing that much Max health just as there was in Demon Souls.

But I will also say, while playing online in Dark Souls did have the disadvantage of invasions, it also had the advantage of inviting people over. Facing off against one player is hard enough, but two or three players would overwhelm all but the most cautious of Black Phantoms. I'd urge you guys to at least keep that in mind if you do wanna play without disconnecting your console/pc from the internet.

They're bringing back that godawful max health reduction thing? I found Demons Souls unplayable due to that, and its removal is what convinced me to give Dark Souls a try.

I personally welcome increased invasions. The areas stay the same, so after you learn them the game loses its difficulty. Lots of random invasions adds a lot of unpredictability. This makes the game's difficulty last longer. I honestly find Dark Souls 1 easy now; I don't mind grinding through the same area over and over in a new game.

Dark Souls 2 ruins your weekends and possibly your dreams starting March 14th. The current word is that the PC version will still ship slightly later than the console version.

I am so tired of listening to people whine about Dark Souls II looking too hard. It's a Souls game. High difficulty is one of the primary defining features of the experience. I'm just glad that From actually wasn't listening to the people who don't understand this, as was feared earlier on.

If you don't like it, then either don't play it or get good.
