Record keeper?

what exactly is this skill used for?

Record keeper, or book keeper. You know what I mean

also I just started a new fort and I forgot to make one of them an appraiser, does this mean I will have no idea what anything is worth?

I believe they'll train up in appraisal as soon as your trader makes a deal at the depot.  Doesn't take very long.

Your bookkeeper noble needs the bookkeeper skill or you get wild guesses as to how much of something you have. More skill means more accurcy. It trains up very quick.

Well, to be more precise:
The skill determines how long your book keeper has to stay in office to reach dthe desired accuracy.

If he is very skilled he might reach the highest accuracy every month
and still, have the time to go on party afterwards.
If he has a low skill (or none at all) he might have to sit in office all days long to even reach a medium accuracy.

Easy enough:

Press "n" to bring up the noble screen.

There you should have pink natural nobles and 5 assignable nobles.
Those assignable nobles are the mayor, manager, treasurer, broker and the sheriff/captain.
Select the treasurer and press s. Select any precision, higher than lowest precision.

Because your treasurer is now trying to reach a higher than lowest precision he will use the skill and thus train it. But for this to work you need to assign him an office. Build a chair, select it through the "q" menu. Make it a room, resisze it and then assign the room to your treasurer.

Presto: Now he will use and train that skill.

Add a table and they will eat in their office.  Actually they'll eat there without a table, but they will complain about not having enough tables then.  You don't need to assign a dining room from the table, and it's actually best if you don't, since shared rooms are less valuable.
