1) Set the entire world as my embark site.
2) Amass every dwarf in the world on a single beach.
3) Create a self-sufficient floating boat fortress.
4) Set sail to see what's at the edge of the world.

I guess, I'd do everything as usual, except on the largest possible embark area and with a ridiculously high pop cap. Having a true city with 1000+ dwarves would be awesome, just like having a real army with several hundred soldiers, not just a measly 100 dwarf militia. Just imagine 500 dwarves in full armor charging at 1000 goblins or even undead. It would probably be extremely confusing, but Fun as hell (no pun intended)

Actually with unlimited processing power you might as well go ahead and top the dwarven calculator by building a computer and installing Dwarf Fortress on it.  Just don't nest identical fortresses or your megaproject goes recursive and you'll never finish it.
If processing power is truly unlimited, you could use it to prove whether or not a particular function terminates.

I would see how many dwarves I could get up too. I would love to have a fortress so big you have to split it off into multiple sections because of a lack of space. Even more so, if it was possible to have them all in one fortress section alone.

I am seeing how many dwarves my computer can handle right now. I am at 125 and no slow down so far.

I was thinking more along the lines of this legendary champion, all clad in dented and dinged up steel plate, his blood-drenched axe slung over his back, a notch in the handle for every enemy that saw the swing of that blade as the last sight they ever saw, a battered shield strapped over his arm... and a fluffy, pink stuffed hippo hidden discretely in his breastplate.

16x16 embark, no population cap.  See where inspiration takes me.

Mine out the entire embark site as far down as possible. Leak the ocean into the magma sea, then mine out as much of the rock that forms as possible.
