This may be just local bias, but I think one of the Dalmatian islands would be the best embark. They're moderate in size, should have plenty of vegetation if resources are reset, and from many of them you can reach mainland by swimming which is basically cheating ;)

But they only have a cubic yard to fit things in, a breeding pair of animals would take up loads of space.

Chickens don't rely on their mothers milk. Dogs do, but even a weaned dog is rather small.

No, the world is as it is today- landmasses are still there, any animals that are currently there are still there, extinct animals aren't replaced. Since all traces of (modern) humans have literally poofed into nothingness, the resources humans have harvested from the earth have been replaced, (copper, oil, things like that). There was some confusion about ancient human remnants, like those houses carved into the sandstone in south America. We aren't concerned about that, so if we find standing stones we find them.
