This isn't all that uncommon.  I've heard tales of people running into bandits that keeled over from old age right when they got into view.  Something to do with when and how DF checks age, apparently.

Indeed. Happens often enough, because DF only checks a unit's age when they're loaded on the map with the player, so Telgin is completely correct.

The giant leopard may not have even been a historical figure, as a lot of animals such as domestic animals have a lifespan of 10-20 years, and DF regularly generates creates around the mid range of their lifespan. Might be that the jaguar was generated over the age of 10, which would give it a chance to die on the spot.

of course, if it was a historical figure it would have shown some screen like "the giant jaguar stands before you!"

Maybe they were just really, really old and the excitement of combat caused them to have a heart attack.   :)

Not necessarily.  DF does many things on periodic timers.  It's possible that it checks once per day or per month for animals (it appears to check on birthdays for fort mode dwarves at least), and that timer didn't come up until after the fight had started.  Only Toady likely knows for sure how this is coded.

I had this happen with a human warlord once, then it started happening more often.
I haf a group if human archers after the pincushioned me drop dead from old age kinda funny
