Alright. Not sure if this goes here, sorry if it doesn't, but I've been trying for days now to make a decent looking Imperial to make a Paladin-ish character.

I also need some help with a build, if anyone is willing to aid in that respect.

I'm hoping he can be skilled in Restoration, Enchanting, One-Handed, Block, Heavy Armor, Smithing and Archery.

Um... I guess I'm wondering if that build is impractical, or something.

Maybe. But I'm answering anyway.

There's no such thing as an impractical build because there's a difficulty option. Might have to train a bit to keep the magics up, especially enchanting, but those will work decently together.

As for looks, Skyrim makes it pretty easy. There are only so many looks to choose from. Just keep sliding until you find a feature that you think you like, then move on. Go back if it doesn't work with something you like more. And work with the bigger features like skin tone and hair first; whoever designed the order of customization didn't do a fantastic job.

That build is fine as long as you don't go crazy levelling up smithing and enchanting faster than your other skills.

Enchanting is the only skill there that is particularly slow/expensive to increase, just make sure to disenchant anything you are able to.

I know this isn't really the topic, but I object to this. It takes me about a dozen tries to kill a troll on the normal difficulty.

That's because you're attacking an enemy you're not really supposed to be attack yet. In the general difficulty scaling of the game, as long as you don't go out of your way to start fighting something you're not supposed to fight yet, the game is piss easy. It's literally impossible to have a bad build, as no matter what you do most builds end up the same once you reach end-game.

You encounter two trolls very early in the main questline, and the dragon isn't exactly easy either. The main questline has a sense of urgency about it. Is this misleading?

I can't agree, but I can appreciate that the experience is different for other gamers. I personally found it to be easy to the point of being disappointing in that regard. Especially dragons, I installed a mod to make dragons harder and they were still underwhelming. The game can be challenging at some points, but  it suffers from what most open world games I've played suffer from; the game gets progressively easier as it goes on to the point where the difficulty level is trivial as you approach the end.

It is entirely possible to make a 'hard' build - simply level up non-combat-applicable spells instead of combat skills. You'll still level up, and so will the monsters (in the areas in which they haven't been locked to a particular level), but your combat skills will not have improved, so you'll be outpaced unless you start getting combat-applicable skills or doing something to boost your effectiveness.

Smithing is worth it because of armor. Enchanting can push it further but doing it all at once will make you pretty weak because of all the levels you have to gain to be an effective enchanter.

I can second this, I tried to make a thief character and sold a ton of random stuff because stealing is very easy in Skyrim.  As a result I got a bunch of merchantilism as well as stealth, lockpicking, and pickpocketing, and almost no combat skills.  So random bandits are now almost immune to, well, me.

My "favorite" moment was when I found a bandit warrior in a room all by himself, stole his weapons off of him, and then attacked him... only for him to kill me with magic :/
