yes 3 of them are brewers and I add the barrels to, I don`t know why they aren`t working, I donīt think I can stand the winter

I was saved by the spring, and according to the laws of Murphy, the dwarves began to make drinks  :(

Are you sure you have brewable plants?
Are you sure those plants are set to be used for brewing drinks?
Press z, move to the kitchen tab, and see.

I assume you have a still with a brew drink job active? I tend to leave mine on repeat.

Also, never rely on water. Sober dwarves are slow dwarves, and one of my first forts lead to death by dehydration because they refused to drink water anymore.

always learning new things, I did not know you could do this on the menu!  :)

  :-\ I have the necessary plans, but I do not know if the signs in blue are or not those that allow brewing plants

I got a big scare, I thought they would all die due to dehydration, now I know I have to build a well but I do not know how to work with wells  ???

Blue means its enabled. This menu is useful for saving certain items from being cooked or brewed. Like how I always end up with 600+ dwarven wine, and only about 50 of the others. So I disable cooking of those drinks, enable it for the wine, and occasionally stop brewing plump helmets.

Also, the stocks screen (also accessed by z) is also very useful, it just so happens the kitchen screen shows the both, the stocks of food items and how they are used.

Also, building a well is useful for happiness and as a back up supply. Otherwise though booze should be your primary drink for dwarves. I also say keep a little variety. I swear I once had dwarves die of dehydration because they stopped drinking the wine (complained about lack of variety) then stopped drinking the water, and died. Others say it can't happen, and I don't dispute that, but I haven't had a dehydration death where booze was accessible since.

And look up wells on the wiki. Otherwise, just make sure the water you are using for the well is underground as others mentioned, or it can freeze.

it is very common when you're new, yes :)

and still possible when you're not new, although, in that case it will be considered a silly mistake that you made, and not some kind of unforeseeable random thing that happens.

read and understand the links people gave you water pressure, floodgates, and how to disperse water pressure using diagonal tunnels, and you'll be doing it safely in no time.

Make rock coffins or rock slabs.
If coffins, place the coffin somewhere and they will bury their dead. If there are no bodies, make slabs.
If slabs, memorialize them. Then build the slab somewhere. I like to make slabs of my deceased soldiers at the entrance of my fort.

Really you should have a graveyard set up for them to bury their dead. If that fails, or you're in a reanimating biome, you have slabs as a back up.

How about hunting?
You can make a crossbow in a bowyer's workshop and some wooden bolts in a craftsdwarf's workshop.
A hunter also needs a quiver made out of leather.

Build a grid of floor grates above the entire city. Draft a squadron of masons and bomb the crap out of the city with falling constructed walls.

Here are the first things I do when I start a new fort (assuming it's a haunted biome or other self-challenge):
1. Gather plants from all over the embark site -- these are useful for brewing, eating, and will yield seeds.
2. Start digging into the soil layer, make a storage room with a stockpile that takes everything except stone, wood, and refuse. (Dwarves will immediately unload the wagon into here.)
3. Dig space for a 5x5 farm plot and order the dwarfs to (b)uild the (p)lot.
4. Set the farm to grow plump helmets in all four seasons -- you have to set the four seasons individually here.
5. Build a still and set it to brew, brew, brew.
6. Once I've dug into stone layers, build a craftdwarf workshop and set it to "Make rock pot" on repeat.  Rock pots are the same as barrels but don't cost any wood.  They're necessary for storing food and drink.
7. Only after I've got a surplus of drinks do I start thinking about prepared meals.  The dwarves can live on raw plump helmets for a long time.
