Keep it in mind, explore further - into the direction we presume the exit to be.
If anyone sees us, or asks, it is but the call of nature. Not even goblins like that "used" filth, and as such we would never dare to do such thing in our room...

I say after we scouted the way, we could wait a bit, let each goblin rest for at least an hour or so. A short rest can do wonders, and they will have to flee back to our village once they have done the deed. Most ideal to strike should be shortly after midnight - most people ought to be asleep, but we still can gain a fair distance from them before daybreak.

Wait, if we're already inside the tree, can we just hack the walls of our room?

Yup, but we're planning to steal stuff first.

I'd say: grab any loose seeds (because there are ALWAYS loose seeds, even more in medieval farming conditions). That way, it doen't seem that we are stealing anything, and we get the seeds that we want.

Yah, fill our food bag with loose seeds.
And someone gets to look for a secondary exit in the darker area.

Fill the bag with seeds, and guesstimate how much food will supply them on the way back. They can always hunt, or gather if they run out close to home. Afterwards, prepare to move quickly by striking the tree and running. More than likely the tree will very quickly begin to wither, and the monks will get pissed. Our guard may have experience, but I don't want to risk it.

Hunch: Stash the looted grain under the head of a bed and then listen intently at all the doors.

P.S.
Goblins are a type of vermin, and are therefore super-effective against grain stores...

Diagur: Pretend to not know where you're going, when someone arrives into the room, ask for where the Bathroom is.
