What's the ruling on level and such?
Because it seems like we have a lot of new players, we'll be starting at 1st level.
I'll have info on the setting up soon, but it will be dwarf related as requested.

As far as available books go, lets say 3.5 Core, Tome of Battle, and the Complete Series.

What does that include?
Does it include the MM3?

I don't understand why you would need Monster Manual III at first level.

MM3 is not core. It's not ToB. And it is not part of the Complete Series.

So.

No.

Alright, what exactly is the Complete Series?
Any book titled "Complete <Name>"

Such as Complete Mage, Complete Warrior, Complete Scoundrel, and so on

Anything that begins with the word "Complete".  Minus Complete Psionic because why the hell would you want that.

Meh. Going with Dwarven Wizard then.

The complete series is the books that have "Complete" in their name. Normally not counting Complete psionics.

Edit: I mean, I guess you could count it, but it's not really useable without also allowing the expanded psionics handbook.

Because that's a sensible naming convention.

Alright. I'm thinking a shadowcaster then.
That's allowed, right?

Oh, sorry, thought it said tomes, complete, and core.
I'd say swordsage then.
