But what exactly can one do? It's not like you can just keep starving their economy forever (morally, that is), nor expect them to not use nuclear power at all in the modern age.

The deal doesn't require them to stop using nuclear power. It requires them to not enrich past 5%, thus not exceeding the weapons-grade threshold.

Medical reactors do require highly enriched uranium though, as do their research reactors and possible advanced reactor prototypes.

But at this point they barely have enough weapon grade material for 6 warheads, if they distribute it optimally, hardly a destructive force.

Not really. Japan was facing a war it couldn't win. The deployment of nuclear weaponry just allowed their emperor a honorable surrender. The destruction involved had no real effect on the war. It was merely psychological.

Besides, at that time, the weapons were barely understood.

Yup, and only because there're so many. Truly, Iran doesn't and can't develop the nuclear weaponry to effectively use them as a psychological weapon.

... Because the idea of more nuclear weaponry = protection from nuclear weaponry stuck from that point.

It's like you're arguing against the effectiveness of nuclear weaponry, which I'd like to mention is a fool's errand. Being backwater theocracy or modern republic nuclear weapons can have major impacts if deployed, which Iran has shown an eagerness to get to.

Another hint: There's a reason Israel regularly states they will bomb Iran before they are able to assemble a nuclear weapon. The impact is not merely 'psychological'.

This is where we start to reach the technological problem. Once you have advanced nuclear reactors, you have nukes even if you don't have nukes, because building one has become a trivial enough task in the modern era. Hence why you start seeing "all-but-nuclear" states being included on maps of the nuclear club (South Korea, Japan, etc.).

There has been none. In fact, Iran had a clandestine nuclear weaponry program that was dismantled after the revolution, because WMD's weren't allowed by their beliefs.

And yes, the problem is that most advanced reactors, especially breeder reactors, are dangerous. Same reason that nuclear reprocessing is banned in many countries, despite being capable of reducing nuclear waste by 95%.
