CookNote Fiberglass ( a description is available at http://23ae.com/2009/11/the-cooknote-fiberglass-chapter-from/) is hard to top, although you need another player and probably an impartial observer.

Absolutely not what you are looking for, but the X-Universe series of games are quite filled with content. You start out in a crappy ship and work your way to creating automated supply complexes, war fleets and a large merchant empire.

Scripts (mods) can be installed to enhance your game by adding more content.

Not anywhere near random though.

All i know have already been mentioned. But that RubyRPG guy pretty much inspired me to get back into console adventures made with hi-level scripting languages.
Expect something beyond my usual insanity sometime.
