There was a bit of a problem regarding flashfreezing, a ballistae, and a barrel of dwarven ale. Gonna fix it up.

Here is an example.
First column of numbers = Base Yield
2nd column = Actual Production
3rd column = How many mouths I am feeding

Now, I'm not really a maths person...  but...  with my base yield of 629:
884 farmers = 1039 food, 1.175 food per farmer (Numbers from above)
813 farmers = 997 food, 1.226 food per farmer
629 farmers = 872 food, 1.386 food per farmer (farmers = base yield)
530 farmers = 793 food, 1.496 food per farmer
247 farmers = 490 food, 1.984 food per farmer

It's just that I didn't know where you see the base yield, but I found it, I used to look with trade/tribut, and you can see it with details of the settlements.

Food as a function(f) of the number of farmers(x), with base yield(y) is:

Now I just need to know how much food each peasant eats, and the fun math can begin!

Which I did myself:
food consumption is 10+#peasants+#soldiers. we ignore the soldiers and get:
c=10+x

That means food surplus is f(x)-(10+x)
And now the fun begins!
Differential calculus assemble!!!!

We find the that maximum yield is at 378 peasants working the field, in your town with base yield of 629.
And I can draw that function too:

Further using my village as an example:

Local Demand = 1440
Workforce
495 assigned to building construction
36 employed in various buildings
884 available for farming and local economy
= 1415 Peasants
Difference = 25

To fill that up, I also have:
10 Soldiers/Militia
15 Soldiers in Training

Total: 1440 mouths eating my food

(Apparently, mobilized troops do not count toward the demand/consumption of food...)

EDIT: To clarify, 1 food = 1 peasant/militia/trainee/mouth 
(Entourage also do not count toward the mouths.)

doesn't matter though as a constant differentiates to 0, so the math is still the same.
And now I broke Maple :(

I was gonna find out when it was outright detrimental to have more peasants working the fields...
Ok, Maple really doesn't like that calculation, but we can just look at the graph.
after 1360 farmers each farmer produce less than 1 food, and so it's bad to have more.

after 1360 farmers each farmer produce less than 1 food, and so it's bad to have more.
So basically, after that, you totally need lots of tribute and plunder to get any bigger/build the big buildings.

Mind you, Base Yield for all settlements are different... and I can assure you, there are some out there that are better then my Base Yield of 629.

Shrubland: 169 Base Yield
169 Farmers = 234 Food, 1.3846

I've been quietly snapping up villages and towns, and am up to 30-odd estates in my domain. Anybody still looking for a lord to swear fealty to?

The equation is way complicated, but here is a graph:

Horizontal axis is the base yield
Vertical axis is the maximum farmers

Surprisingly It's going up exponentially.

Well believe it or not this sort of economic projection existed back then (even the idea of devaluing currency), but there was still a lot they didn't know yet.

Mind you, as far as "feed the peasants" is concerned they often just left that up to the peasants to sort out and took a tax of their food.

I'd figure a medieval lord would have accountant type people under em, figuring out the taxes and food.  And possibly steward(s) of sorts to help manage affairs at the estate(s).  Various states of delegation/autonomy between the whole lot.  They probably did not care so much about the food as they did the taxes.  (Though, it may be more pragmatic to consider that fed peasants can consistently pay more taxes then starving peasants.)

@P.S.  *shrug*  I just discuss wherever the discussion is(and if I have any words for the topic...).  Plus, it kinda creates more exposure talking about it here then it does on the official forums.

You have to remember that for most of human history and the medieval era that: Food Is Money.
In a feudal system, peasants simply does not need money: they get all their goods from trading at the village, and pay taxes in the form of food.

Mind you, it's farmers, not peasants.
