catching (big) fish

I've loaded a map that has tons of carp in the river.  How do I catch them and eat them?  I understand that large fish need to be "hunted" instead of caught.  I'm OK with that part, I can certainly have my marksdwarfs shoot them.  My question is how do you then collect the body for eating?  And... do you need a butcher shop, or a fishery, to prepare the meat?

Drain the water.
By Damming and then Draining

make a diversion from the river that you can open and close at will, plus a way to drain it. Either build cage traps to catch fish or just let them air drown immediately when you collect them
