Hi, I've a few undead body parts stuck in traps at the entrance of my fort and now none of my dwarfs will go near them, meaning my full population and a caravan are all stuck inside. I'm getting task interrupted spamming my notifications and im out of ideas how to clear them now.

 Any ideas how to resolve this?

Get your army together and go clean the parts out. Alternatively dig a new way out and seal off the old one.

If you're in an evil biome then weapon traps are useless against undead. They may actually make the problem worse.

Use cage traps instead. You'll get cages full of undead creatures, but its easy enough to haul the cages to a stockpile and safely dump them into a pit where the undead can be safely disposed of.

Dumping them directly into the magma ocean is my favorite means of disposal, but you need a straight shot down to the magma ocean to do that.

i cant seem to get anyone to go near the traps to remove them to storage. is there something i'm missing?

You are probably missing the undead or undead part that is not in a cage.  What message are your dwarves giving you when they turn around?  That should tell you what is spooking them.  If you have military, order it to kill everything in the area.  If you are not in an evil biome where the dead reanimate then that should take care of the problem.

Check the units screen ["u" and scroll over] to see if any of those bits are still alive... or if there's an alive zombie bit near there that is spooking your dwarves. Also check to make sure you don't have a door still forbidden or a bridge still raised... it's common to "lock" doors during an attack and forget to unlock them. Maybe the dwarves won't go there because they can't reach it.

I sorted that problem, turned out that a couple of zombies had fallen into my moat and i never noticed....... now my only issue is that some of the zombies and both necromancers i have caged dont show up when i try an build my cages for target practice or in my zoo.

That's probably because you haven't stockpiled the cages on an animal stockpile?

when you do manage to find those caged necromancers I'd setup a special place for them.  Setup your shooting gallery in such a way that your marksdwarves can shoot the undead but cant see the necros.  Additionaly have it so the necros can see the undead but cant move into a position to be shot.  The likely result a never ending supply of reanimating parts to shoot at :P   a method to block the necros LOS to the zombie parts would be a good idea should you ever need to go in there and clean it out.

Caged necromancers are amazing. They're an extremely useful thing. Do not kill the necromancers! Capture them instead. They're immortal, and will not die of hunger or thirst.

Necromancers also cannot destroy buildings. Its very easy to make a shooting range of arena with endlessly reanimating undead. Just dig out a 10x10 room that is 3 levels high. On the upper level, alternate floor grates and constructed floor tiles. Necromancers can see through floor grates, but projectiles cannot move through them. A floor gate cannot support another floor grate, so you need to have constructed floor tiles in there.

On the second level, build a retractable bridge. Link it to a lever. This lets you toggle the reanimation whenever you want simply by pulling a lever.

On the bottom level of the room build a barracks and dump some corpses. Its best if the bridge is extended while dumping corpses. Once they're in place and you have your military ready, retract the bridge. The corpses will come to life and your military will begin its sparring lessons.

Note that you want to use small corpses. If you're dumping dragon, titan, whale, and draltha corpses in there, you're going to have a lot of fun. Start off with things like rabbits, chickens, and cats.

You can also use this same setup and then filling your undead room with spinning disk traps to take those unusable "goblin skeletons" and turn them into individual "goblin bone"s.
