Count Foles glances at the bottle of wine. "My apothecary told me to stay away from the drink." He gives it a wolfish glare. "But I suppose it would be rude to refuse my... host."

You crack open the bottle of wine, and pour a deep glass of the red for each of you. Both of you take a deep drag on the wine, and Count Foles remarks that it is a nice vintage. There is a pregnant pause.

"You have done well for yourself here, Sir Stone. This was a sleepy backwater when you first arrived here. And now..." He gestures sloppily with his wine, spilling a few drops on the floor. "And I understand that you are a father now. How... delightful for you."

More importantly, let's not tip our hand.  He knows we know, and we know he knows.  We don't know if he knows we know he knows, or not.  We aren't in a position to react properly if he tries something stupid, so let's just let that sleeping dog lie until we can put it down safely.

Besides, if he's the sort of man who feels guilt about these sorts of things he's already being tormented by it without our help.

alright, I'll retract my suggestion.

its a somewhat troublesome situation, I don't want the count to feel like he's out of the crosshairs. if he's feeling safe he might start shit again, at the same time I wouldn't want to outright threaten him since that might make him move forward and do something stupid.

lets play nice.

Don't rub it in his face, we're not gloating assholes.  Well, we are, but you know when to gloat.  And if we can make him an ally of ours then he could be quite useful.
I think we should try to get him a little more engaged, ask about his children, if he has any, and failing those two things, try to move beyond the awkwardness, perhaps we ought to ask why his apothecary told him to stay off the drink.

We need to mention it somehow, I feel, in order to gauge his reaction and determine if he is still out to kill us.

Simply make a passing comment of the relief we feel at the execution of our would be assassin, the successful defense of the realm, and our desire for a peaceful future. Not enough to tip our hand but maybe he will show his, if we see guilt and regret we should give him a chance at redemption.

Good suggestions, although I'm not sure I'd ever go so far as an ally... but I'm keen to have him a bit mollified while we work on advancing ourselves and building stabler alliances. Inquiring into his health is appropriate.

If we really want VP bring up the whole "tried to kill us" thing, we could just say something like "Things are going well; no further attempts on my life outside of battles have occurred, unless you count this one bear..." before going into a modest or no account of our bear tale.
