Can I connect multiple things together?

Can I set one lever to do two things (like open/close two doors) or set a lever to open a door, the door to open a floodgate, the floodgate to close a drawbridge, etc...?

You can link one lever to many different objects, but can't link those objects together. One thing to remember though, is that you can't have the same lever open one door and close another door - things have a default mechanism-operated state and will return to it even when you're doing weird things to prevent that. So it's either raise all drawbridges or lower them all.

So I can't make a crazy train of events, but I can have one pressure plate simultaneously seal the room off and open the magma floodgate, quickly cremating goblin intruders?

Not quite, you can have a flowing stream of water triggering pressure plates that trigger said events. Though that's probably a little cumbersome.

You could probably make a lever open one door and close another, if you use logic gates.  Look at Computing and Logic Gates.

I'm a noob when it comes to mechanisms, but AFAIK the only way to make a door trigger an event is to have the door release water (magma, etc.) onto a pressure plate.

Levers, OTOH, can be linked to multiple devices.

I thought it might be possible to build a pool that keeps its level automatically by putting fill and cutoff switchplates in alcoves near the bottom and top of a reservoir, but I haven't actually tried it, and you might have to use the water-powered logic circuits another player mentioned on this forum to actually make a self-regulating reservoir work.

So far all I've built were manually-operated locks, and the lock system works fine for me.  You don't really even need a lock if your runoff reservoir is big enough and you don't mind your water system being dependent on the timing of your lever pulls.

(A "lock system" is simply when you place 2 gates between your water source and the rest of your plumbing.  The space between the two gates is the "lock", and the volume of the lock determines the volume of water released when you cycle it.)
