Usefullness of Trapping?

What is the point of the trapping labor?

It's not too useful. A trapper can trap vermin, which can then be tamed. But there is not much you can do with tamed vermin, so yeah.
Possible uses include vermin hunting (if you have no cats), a cave spider silk farm (which is nowhere near as practical or profitable as a GCS farm), vermin pets (which disappear after a while), a vermin zoo (for dwarfs that don't hate it), an emergency food supply (for the absolute worst case) and that's all I can think of.

The most detail-oriented among us might put them in the bedroom of a dwarf who likes them.

Children you rescue shouldn't behave like rabid beasts.  I guess your regular companions shouldn't act like rabid beasts either.
I think that's a little more impossible than I'm likely to have time for.

Or a dwarf who hates them, depending on how much of a pain in the ass he is/how cruel we are.

Leeches are a type of vermin but are they lethal if someone or something is covered with them? If leeches are potentially lethal then it could make trapping useful.
I've never had a map with leeches yet but I got one from the elven traders and I thought it might be possible to make some sort of trap that forces invaders to travel through a leech infected shallow pond where they then slowly die from a lack of blood.

No. Vermin don't ever really attack anything even if they can (with the exception of a few things like cave spider bites and bee stings), so they won't prove fatal unless you somehow managed to get a massive number of them in one place (think like 10,000-20,000) which is something that would only be accomplished through reactions, not through trapping.

How could you not trap 10-20,000 leeches? If there are enough of them spawning, and you have enough traps, I'm sure it's possible. Don't vermin spawn randomly? Or are they like everything else and only a certain number of them are genned at world creation?

Everything else has a limit how many can spawn on the map at once.

This feel by the wayside but yes! Dwarf cheese is made by processing purring maggots, I've never done it but it is there.
