I have looked all over in game as well as google and feel I must be missing something simple.  But is there a way to select a hunter or soldier and see a list of what animals are assigned to him?

As of now all that I have found is I can find a dwarf then go into the animal screen and see if he owns any then assign one and go on to the next...it was easy with 10 troops 2 hunters and 3 dogs but now I have 40 troops and it is getting tedious.

Work animals show up under Relationships (with v from the unit list or v over a dwarf - z).

The Animals screen (z->Enter) will also show which Work Animals (war- or hunting-trained) are assigned as "pets" to which dwarves, just like with normal pets.
