Its the only explanation for the gibberish they speak.

Dwarves - German/Danish/Norwegian - those languages have a "primitive" (no offense) feel to them, and the already exisitng accents in the game slightly nod towards those.

Actually its the other way around. The more a Language is distribute the more it gets dumbed down. The english of Shakespears time was more complex then todays. Its more opportune to have a easy and fast to learn language if you need to communicate in a big and far spread crowd. The smaller the core language the more people you can integrate fast and reliable into your group.  Esperanto would be the far end of this. The language base can be learned in 2 Hours and afte that you need just a few vocables.

I agree thought. We can also add some Slavic languages into the mix for dwarven.

Someone made an animation about Dwarf Fortress and it was spoken in german, which felt right for the dwarves. So for dwarves I'd say German.

Humans seem to have a sort of mix between european and arabic so I wanna say like... A mixture of spanish and arabic.

Elves: I'd agree with french or italian. Just seems like a proper fit.

Goblins... I dunno why but I wanna say Aztec.

Kobolds: they originate from 16-1800s german folklore, so a mixture of broken german and broken english(like they know the words but neither's rules)

About Bolds', wouldent, like, each cave have their on made-up launguage, since they are mostly isolated other then their thieves?

Sorry but you know how french people are stereotyped (wrongly) and it's common knowledge that Italian is actually French. Don't tell me you don't know that :o

And that's why I think Kobolds should speak Afrikaans. It feels alien enough for me.

Errr Afrikaans is a german/netherlandian (?) derivative. Just to be sure you dont mean African tribal-languages.

Actually African tribal-languages would go well with the animal people. Kobolds should speak old chinese dialects.

They are similar, very similar. Same with Spanish, they are all really similar.

On review I'd say Kobolds speak with interpretive Dolphin, or else their language is still developing.
