Does it matter what buildings are made of?

For instance, if I build my carpenter's workshop out of wood, or chalk, do I need to upgrade it ever? Does it impact happiness?

It raises the overall value of your fortress. AFAIR, if you forbid chalk and your workshops are made of chalk, the workshops can't be used anymore by your dwarves, but that may have been a feature in an older version.

I always build my workshops with rock blocks.

It doesn't matters for most purpose, as long as it meets the requirement. I would suggest using wood or rock blocks, to make stock accounting easier and to prevent accident forbidding through stock listing. Metal block's same value as bars, but worth it if you want to separate what's consturcted from raw material. (You also get 4 rock blocks from one boulder )

One place where the value would matter, is if you're using it as part of a room. Then I advise using block of most valuable material if you want to make dwarves happier.

Also, dwarves rate buildings made of their preferred materials much higher than their normal value, and therefore can produce better happiness boosts. This is most notable and noticable with nobles' furniture. If a noble likes something like brass, it's about as good to make all their furniture out of brass than possibly gold.

I think that a "satisfied at work lately" thought can be generated if the workshop is made of a preferred material, but that might be limited to working with preferred material/items.

I've also thought that metal doors and the like take longer for building destroyers to break down, but I'm probably wrong about that. I still use metal doors for secure areas, if just for aesthetics.
