Stockpiles over spaces?

I plan on making a very tall tower -- Dedicated to the production of the heavenly drink of alcohol.
The design is many floors, with stills on each floor. Brewers will be assigned to each still, and when a beer is finished, I want them to drop it in a chute that will carry it down to one single quantum stockpile, where dwarves will go to get their booze.

Is it possible to place a stockpile square on an empty space and have a dwarf drop it down multiple Z levels?

No, but placing a dump zone next to open space will make dwarves chuck it over the edge.

Do the dwarves dump items to the closest dump zones?

I'm new to the new version of df but it seems like you could set up a minecart to dump over the edge then you wouldn't have to fool with dumping everything. Minecarts seem to be the best way to quantum now btw, so there is that, but your tower sounds like more of a dwarfineering type thing (and awesome). Good luck!

Yeah, auto-dumpster with minecart would be more effective, since minecart route can take from stockpile and minecart don't have to be moved from the stop to dump, and set the stop to dump in right direction, and bang.

Though stockpile don't seems to 't'ake from workshops properly, so I don't know how effective it'll be, but the principle should work fine.

Keep in mind that dumping is hazardous to anything standing below.

And using mine carts means you won't have to designate items for dump or unforbid anything and nothing could end up in the wrong dump hole. If I ever designate anything for dumping, Then I want it to land on magma. No exceptions.

I read that guide.  I'm still lost.  Takes too long to setup.

Build and set the track stop, select which direction you want the cart to dump using d. ( You don't need a track for simple dumper, stop can be found through b > shift c > shift s )
Set up the stockpile you want it to dump from.
Press h for hauling then r to set up a route, move the cursor over the track stop and press s
Hit enter and then x until all of the stops are cleared out
Move the cursor to the stockpike you want it to take from then press s to link the stop to the stockpile
enter to set the stop ( as if it's a stockpile ) for what you want it to accept
Press v to assign a minecart

Does that helps?
I'm not sure how to describe how to set it up better
