Build an aincent-civilization style megaproject that is a scientific study of all plants: you aim to have great numbers of all possible plants in a megaproject structure of an aincent city.

Try a Cattle Ranch.  All food in your fortress must come from these large, grass-hungry bipedal grazers.  You could milk them to make cheese as a supplemental food source.

Alternately, you could increase the challenge level by doing an "All Beef" challenge.  Toss out all those icky internal organs your butcher produces, and eat only the BEEF.

Foolprooof way to penetrate aquifers of unlimited depth.  (Make sure to import at least 10 stones for mechanisms)
Toughen Dwarves by dropping stuff on them.  (Nothing too heavy though, and make sure to wear armor.)

Do this, but replace cows with unicorns.

Make a reaction that turns organs into beef instead, but in all caps.

This is a BEEF roast. It is made of BEEF, BEEF, BEEF, and BEEF.

A challenge I enjoyed was "Winery" with a mod applied. Goal: Make a realistic winery and export every type of alcohol.  At the time the mode had about 30 distillable plants, so I had a bunch of fields, a few "wine press" areas and was working on the "tasting house".  I was trying to "Age" the wine to insure the cheap stuff went fast and the good stuff waited a few years.

1. Mod plump helmets to be poisonous and cause bleeding. (if that's possible)
2. Eat nothing but plump helmets.

Bonus: Make the plump helmets make the dwarves' blood occasionally turn creatures that touch it CRAZED.

Busy weekend. Didn't have time to play DF. Does anyone know how to mod plump helmets so their only source is butchered plump helmet men? :)
