Preparation is the best defense - for instance, on turn one, before you miner(s) even takes that first swing, you can designate everybody else to cut trees and gather plants.

Step one is to hit the civ alert - get that set up correctly, and it doesn't hurt to test it during peacetime.

Remember that dwarfs won't spring traps - unlike real life, you can leave the drawbridge open a little longer than they do in the movies.

There are also more interesting ways to take advantage of that ;)

Alas, an ambush is by definition a surprise.  If you have a lot of guys outside, you could station your military out near them, if you're confident in their abilities, as they will almost never arrive in time to save ambushed civs from inside.  Being close enough to distract the invaders might be sufficient, but it gets dicey, as soldiers will engage in combat, perhaps in an undesirable way.

If you have a booze emergency, it's probably best to turn on plant gathering for everybody, designate a section of plants outside so you get a bunch done fast, then make one beard brew on repeat.  Designate in sections, so they don't go too far afield.  You'll get new outside seeds, too, so you can do a protected inside garden later.

An inside well wouldn't hurt, either.

A simple thing you can do is just not tell your dwarves to do outside jobs during the last month of a season, since that's when the goblins come. Some dwarves may get killed by ambushes but not as many.

Another simple thing to do is pasture your expendable livestock outside, increasing the odds that the goblins ambush a goat and not a dwarf. That'll give your dwarves more time & space to make it through the fortress gates.
