You can assign professions, or if you want more detail, skills here. Seems the game suggests taking a combination of miner, a mason/architect, smith, woodcutter, and carpenter for your five free dwarves. The other screens are for your initial equipment. Seems you can request generic item types like felling axes and picks, to detailed items like a rotwood bucket with a silver handle. The game suggests quite a bit of food and rock blocks, and has quite a lot of tools and raw material already selected. Apparently the military dwarves accompanying you already have equipment.

Black Hog - A big pig that is accustomed to living underground and mostly eats fungi.
Cave Ox - Underground cattle that is priced for its long fur and milk.
Echo Fowl - An underground bird that is kept for its eggs.
Ghostly Cat - A small feline loved for its independence, hunting of vermin, and... slow reproduction? It's also pretty silent it appears.
Silkbee - A hive-building insect. Its honey is inedible, but can be processed into a fine thread.
Stalking Hound - A canine that is well adapted to aiding in combat and the hunt.
