Is it possible for your hunters to wipe out a spieces? Say there are elephants in my biome and my hunters hunt them alot, will they stop spawning eventually, or are they an endless supply? And if it is possible, are there ways around it?

Yes.

Don't kill all of them.

They don't graze. So cage them, breed them in a room, and periodically cull the herd.

I don't know if you need other ideas when you have magma.

Is there a way to find out how many remain?

Yes, count how many you kill until they don't show up any more.

two things I want to mention:

1) elephants do grass, at least tame ones do, and they can't feed themselves fast enough to not starve, so what you want to do is capture wild elephants and never tame them and enclose them somewhere and let them reproduce as wild animals, and avoid killing the last male and female to keep the herd going.

2) I've read that if you kill all the herd that shows up you end up killing the population but if you leave at least 1 wild animal leave your map the population keeps going.
