I would, but I don't know how, and also disabled the innate necromancy powers, after noticing my enemies/allies using it on my fallen enemies, and after realizing it causes MASSIVE LAG when your army gets too big.

Trying to outrun the zombie army = hard

Clearly you need to make it so that who ever you infect don't screw you over with reanimating your dead, also make a insta-zombie killing spell just incase that happens.
Though since it's Dwarf fortress if you don't properly remove any chances of another npc like you running around you end up with huge necromancer battles where both parties have anti zombie tech.

An easy way to prevent running into a bunch of overpowered jerks like you is to make the overpowered jerk a very, very, very rare caste of a weaker creature. Say, if your overpowered jerk is an invincible adamantine colossus that breaths fire, animates the dead, and other such things, make the rest of the creature copper golems of average size with no special abilities. Make the ratio of OP jerks to copper wimps 1:10000, and there's virtually no chance of ever coming across another one in your travels. If you do, it'd be a nice boss fight for sure!

I was going with setting up an entity that's doomed to fail, but slap on the outsider raw on the creature, that way you are rarely ever going to find a single unit of that kind.

You need the creature AND the entity. If you just add the creature it will exist but won't show up as an option for adventure mode, so you need to add an entity definition for it. He had one posted with the creature raws.

   [CREATURE:COLOSSUS_ADAMANTINE]
   [INDIV_CONTROLLABLE]
^these spaces there, by the way, is supposed to be a TAB key, but the thing is this thing won't accept tab, so i just put spaces for the sake of looking more correct, make sure you replace all the spaces before the brackets with a single TAB each, which is probably your problem.

Probably could kill one with a Masterwork Candy weapon, or Artifact Candy weapon... Or Titanium, Masterwork or Candy...

Actually I don't think so; when armor and weapon of the same material clash, the armor is usually successful at deflecting the blow, or at least turning it into a blunt attack, and that's also why you'll (probably) never kill a bronze colossus with bronze weapons.. And as we all know, adamantine makes for awful blunt attacks. That's very old science, though, and it could have changed in the meantime. Someone should test all manner of strategies for taking down such a beast.

Well I just played for an hour almost on this guy.. Got 20 followers with me or zombies.. 2 cities are wipped out not even a scratch besides a lucky shot to the head
