Just wondering, I personal like to find an open area and dig down.

I like carving into a mountainside; the more of the fort I can fit on one z-level (like the old 2D days) the better.

I dig down in an open area at an angle using ramps. When I reach stone I stop going down and extend the hallway for about 15 tiles until it reaches the room with the trade depot.

Mountain side.  Lets me make use of hill as part of defense.

Dig down is less preferable, esp if I must ploiw through an aquifer.

I prefer mountainsides, but really most of my fortress is built around a 5x5 pit straight down about 10-15 z levels, with a spiral staircase of ramps around the edge. I dig into the mountainside and set up my armory and such there, with a large room containing the pit.

It really depends on my mood, I used to prefer mountainsides but lately I've been going for above ground forts or ones built on flat land. One of my favorite set-ups involved digging directly into a frozen ocean and building a fortress completely out of ice. It's nice and keeps everything one color.

I choose some plains and build my own mountain, whilst digging deeper.

If you put everything on 1 level which near the top is probably dirt, how do you mine for stone and ore. Do you just make mining tunnels?

I like digging to mountainside, it's somehow nicer to see the first floor of your fort and some outside environment at the same time.

Mountainside by far, preferably in volcano.  It's all fun and games until I hit the evil aquifers that support the tree-huggin' elves, and the no-good goblins, ESPECIALLY if it's a flat plain, as then, I can't really get by.  (The aquifer also loves to be multi-level upon me too, so naturally, I absolutely detest aquifers, but that's a different story altogether.)
