May have been mentions (or is in the game and im noob) But being able to set which stock pile is filled first?

Currently you can accomplish that (sort of) by having the low-priority piles take from the higher-priority piles, with the top-priority pile being the only one which has no "take" setting. It's not directly what you want, and the hauling won't work quite the same, but depending on your purpose it may well be good enough.

tho this may well result in the top-priority pile being repeatedly filled from the others
