Hum, I could see some desire for some open spaces, either open to the sky or actually outside (though probably closed off by walls/buildings etc or otherwise secured). Decent points. Taking FPS out of the equation, which we are for this, waterfalls are possible, as is plumbing in general.

I always make those with green glass blocks. I'm probably going to start using clear glass, as I've added a reaction to the kiln to make fertilizer (potash) out of vermin corpses.
Well that's a possible spin off the above comment and not entirely an unreasonable one. I've always been kind of personally against it, because I've just thought about how that glass might break.... Keep in mind this portion of it is only and entirely a personal preference of mine. I could see dwarves wanting to live around some sort of atrium space with the top closed off by glass though. That might be an interesting idea.
I was thinking instead or also of the centralized chimney idea (well protected thermal exhaust ports etc) whereby the living quarters are built around protected chimney ducts etc. It's an idea in any case, and similar enough to mention I suppose.

You know, I think ideally we're going to need a fairly large clothing industry to deal with providing multiple outfits to dwarves etc. That actually wouldn't be unreasonable if you think about it. Same idea for laundry and all of that stuff you can imagine. The notion of having clothes would make me think that we'd want them washed and frankly laundering clothes can be its own industry to be perfectly honest. That in and of itself could require some sort of site and or facility to manage and of course people to actually wash the clothes. I am imagining dwarves don't wash their own, but that isn't necessarily true either in an absolute sense. Though that might be how it works out.
Well, for a place to live, first analyze where the fortress is built. If the fort is built on a glacier, odds are the living quarters would be further underground, food would be stored near the surface, and remaining storage areas would be above the living spaces.
If in a temperate forest, the food would have to stored underneath the beds to avoid rotting from being close to the surface, and realistically, the dwarves may wish to go outside once in awhile. Above ground structures wouldn't be unheard of.
Are you asking about the culture the dwarves would have, Truean? Because that's the closest answer to your definition I can come up with. If it is about culture, check what gods/goddesses are most common in your fortress and extrapolate from there. Build them a temple if necessary.

That's a big part of it. I agree entirely that the area and environment we're talking about have to be taken into consideration because otherwise nothing is really going to work for the most part, or at the very least it isn't going to work as well as it could. The environment is going to dictate a lot, and the social climate is part of that. I imagine that the things constructed/dug out underground or otherwise are going to be a major factor. An equally major factor is going to be how the dwarves are at getting along with one another and what their expectations of space are (and what they want as opposed to would they put up with being shoved in a hole for a room). I'm trying to picture how to plan an underground dwarven neighborhood and community in terms of both individual relationships living in buildings, the buildings themselves and the neighborhood level of interrelated buildings making up the community.
You've got all the same considerations to deal with here as any other dwarvencommunity and food storage is a major thing to consider right up there with food production / procurement. Then of course you have preparation etc. After that you've presumably got refuse disposal etc. That would ideally all be taken into account at some point and in some way. Also keep in mind you're going to want to ideally have more than one food source and more than one kind of food available, or at least I would imagine that would, for the most part be considered, "understood."
I mean, unless people like the idea of only eating one type of food.

Okay, from a Dwarf's point of view, how would I want the Fortress built? That..uh..really depends on a lot of factors. What resources are available? What biome? Is magma available? Have we modded the raws?
You know, actually this might be where one of my greater problems in describing this idea comes in. I don't have specifics on a lot of things here. All of the stuff you pointed out is entirely valid and a very well taken set of questions. They are ones that I'm going to have to think about. Presumably there would ideally be a lot of room to dig around in rock, but yeah. That's clearly something to consider and it could presumably change the answer quite a bit either way you look at it.
Once you get up, despite the majority of the current dwarven race saying otherwise, cleaning yourself somewhat might be nice enough to consider. I'm imagining a mirror and at least a basin of water/bucket along with something akin to a table/long dresser upon which the miror rests. Have to have those beard combs somewhere (Now I can see a dwarven beard comb industry, complete with selling stands for them), and perhaps some ties or other manner in which to braid the beards, assuming that's your deal/you're male.
This. After food and a place to sleep I'd prioritize a bare minimum of sanitation over anything else. Not just because of the smells but everything from fleas to cholera that's caused by a lack thereof.
You know, I absolutely agree. That goes right down to infrastructure. For this reason, I usually set aside an entire z level of the fortress to be used almost exclusively for "plumbing" to get water flowing through various pipes in game. In any excercise, I can imagine we'd want some type of plumbing for this along with other infrastructure. I don't think we'd be lucky enough to get anything like individual plumbing, but several nearby communal wells and bathhouses don't seem too out of reach really.
