Copper is a metal used in a large number of alloys, among them Bronze, which is almost as good as iron (but not quite) for smithing weapons and armor. Pure copper is one of the least valuable of the metals and a sub-par arms material. Because of this, it may be best to use copper to smelt more valuable alloys.
Copper is smelted (at a Smelter) from Native copper, Malachite, or Tetrahedrite.
Copper may be combined with other metals at a smelter. The following is a list of recipes involving copper:
Brass = Copper + Zinc
Bronze = Copper + Tin
Billon = Copper + Silver
Fine pewter = Copper + 3x Tin
Trifle pewter = Copper + 2x Tin
Lay pewter = Copper + 2x Tin + Lead
Nickel silver = Copper + 2x Nickel + Zinc
Black bronze = 2x Copper + Silver + Gold
Sterling silver = Copper + 3x Silver
Rose gold = Copper + 3x Gold
Bismuth bronze = 2x Copper + Tin + Bismuth

What are the uses of all the different alloys, and does it at all make sense to make pewter?

I believe only bronze and bismuth bronze are weapon-grade there. The rest are just bling.

Then if bronze is better than the second, there is no reason to make bismuth bronze?

This is correct. Bronze and Bismuth Bronze have the same material properties with Bismuth Bronze being slightly more valuable. When used for weapons or armour they are identical. Bismuth Bronze is generally only useful if you happen to have Bismuth and want more Bronze per unit Tin. The others are all, as stated above, non-weapons grade and therefore only useful for furniture, crafts, decorations and so on. Generally, you'll only want to use them if you want to add some realism to your creations or you are looking for a specific value modifier for a particular item. One or two of them may result in an overall increase in value if that matters to you.

An extra important thing is that bismuth bronze is far cheaper to make if you have bismuth, with half the fuel usage for the same amount of bars that normal bronze uses. Ideal metal for sparsely wooded areas with excess bismuth.

I make pretty roads out of rose gold and the rest of the copper I kinda ignore

Give humans and elves instead of actually valuable stuff, such as that +<<+dwarven bone crown+>>+, so that they think you gave them something valuable even when you didn't really.
A stack of 100 coins cast out of adamantine is worth ~6'000, I think. That's a lot of booze.
