Specifically, is there a way to specify a reaction to use the corpse of a sentient creature (all races) as a reagent?

no. Corpses cant be used in reactions relyiably anyway.

doesn't CORPSEPIECE work? I remember that I could turn any corpse into food before.

Also the entity has to be ok with butchering/eating sentients I believe, which in turn your butchershop takes care of the bodies.

I was going with adventure mode though I still don't think entity has any effects on a dwarfs outside of worldgen.
