My best swordwarf is paralized from waist down and he crawls bravely towards his enemies wearing a suit of masterful steel armor. Also in one of my older forts one of my axedwarf punched a unicorn in the face and knocked all of its teeth out.

What actually happened is even funnier.

It wasn't some sort of 500 vs 1 scrum with the goblin emerging victorious, with the way legends mode combat works, it was all 500 vs that 1 goblin, one at a time.

Essentially 1 vs 1x500.

Goblin: I CHALLENGE YOU TO A DUEL!
Human: K
The face hits the human in the face, jamming his face through his face.
The human has been shot and killed.
Goblin: NEXT
Human: K

Yup. That's how you get Dwarves, humans, goblins... Elves taking on thousands of soldiers and winning.

I always read it as everyone standing in a line. This can get weird, if you have a single supersoldier, like one of the night trolls, at the front, the entire army can be killed with no losses. But if hes at the back, death to your almost entire army.

This explains why in my current world a gobbo civ called "The Wooden Torments" has won almost every battle they've fought, even when HUGELY outnumbered. Their leader is a really badass demon, and has killed thousands of elves, humans and dwarves.
