Don't use your real name for starters. Hell you could even provide false information like a fake address, phone, etc.

And avoid facebook apps like the plague.

Firstly, you can just not enter the info you don,t want to show. Also there is a way to hide your profile from the search. And never use any apps.

Apps can see your account through your friends accounts, and sometimes even through THEIR friends accounts.

I have no idea how to turn any of that access off.

Though usually they just collect marketing information and won't give away personal information to crazed lunatics. But its best just to provide as little info as possible.

I wish I could help. I couldn't figure it out after they changed the security policy again, so I just removed all the information I could and deleted my account.

Why do you have to have one? Could its function be replaced by simple email lists or another social service like Twitter, Google+, or a blog?

Somehow switching to them wouldn't work well on the privacy part.

Social Networking Sites make money by selling two things.

A) Ad space.
B) Marketing information (x person likes y).

I noticed this myself, long ago the ads I got on the internet were usually random, then I bought a laptop cooler from newegg.com, from that point forward I would see a newegg ad for laptop coolers on various webpages, and still do.

Safest way is to provide absolutely no information; use a fake name, etc. You could even delete your own personal account and just set one up for your practice, to provide even less information.

There are privacy settings on your account. Next to home, click the arrow ---> Privacy Settings. Set this to Friends if you only want Friends to be able to see your page.
