It the defence of theoretical physics theories, if there is no way for a theory to have produced behaviour like is currently being observed, then the theory is thrown out. This is why both the inflationary model and faster speed of light model are both currently open for further investigation - both would give a universe like we currently observe and so are equally valid until experiment proves otherwise. I know I am preaching to the converted here (religion pun FTW!), but to dismiss the idea as it is silly, or due to some devotion to Einstien (who himself preaced in defence of the scientific method out of how weird relativity was, and similar for quantum), or as creaitonists have an ass backwards take on it seems a bit short sighted.

Einstein worked years to try to correct his general relativity theory, because of "issues" and non unchanged universe and stuff that had to matter with cosmological / philosophical stuff. I don't remember the exact thing, but I know some catholics argue that's a sign of god.

The correction you are referring to is Einstiens cosmological constant, which he openly addmited was a fudge factor. It was taken to be common knowledge at the time that the universe was "steady state", and Einsteins work on general relativity suggested that this was not the case. Not wanting to disagree with consensus he added the constant to cancel out the suggested expansion. Interest in it has been rekindled by the apparent accelerating nature of the cosmos, though with a positive value as opposed to the negative one proposed by Einstein. He regarded the inclusion of the constant as his greatest mistake and was embarassed by how he fell into line (very much unlike him) instead of challenging accepted thinking (which was his normal approach).

I am 100% unsure as to how this can be used as an argument for God by any holder of religious faith.

I can't help but feel (personally) that Jesus was simply a nice guy that got well known, and over time it got a bit exaggerated.

Seems to me that it's whatever suits them in the circumstances.

That's what I like about catholiicism: We have a whole city-state devoted to the task of making it possible for us to ignore the unpleasant bits from the bible. And because that city-state is downright batshit crazy in some points, we can also ignore what they tell us to do!
