Scarcity of 2500 makes finding an embark site tedious.  So I turn it down to 1500-1800.

I like freezing areas, because nothing drives me up the wall like having dwarves run outside to get a drink when booze supplies dip, and I hate leaving burrows on all the time;
Just a little note - you can thoroughly suppress drinkers and fishers (immigrants) by turning on Zone only drinking/fishing.

I don't think it works unless there is a designated zone available, as I've still had them flood outside with that on. It's nice when there is an interior well up, but that may take a while.

Usually savage embark.  Calmer gets boring unless there's a siege.  Warm environment, don't really need water on the map freezing and thawing all the time.  Useful minerals near the surface, preferably something suitably ferrous.  Sand.  Enough elevation so I can carve fortifications into the side of a mountain.  Clay and a volcano are nice bonuses.

River, Flat, Warm, No Aquifier.
Bonus is access to hostile Elves.

Everything else is unimportant.

As small an embark as possible.  2x2 is good.
At least 2 biomes for variety, more is better.
Deep metals, shallow metals, some source of water.
Lots of neighbors, friendly or otherwise

Lately it's been:
3x3 embarks.  Recent projects needed more space. 
Volcanoes, so I don't have to dig deep to get magma.  (less pathing = less of an fps hit)
no river, yes aquifer (infinite water with a smaller fps hit - I think)
sand
At least one evil biome, preferably terrifying and at least one non-evil biome.
