Ambusher, marksdwarf, and archer are the relevant skills. He'll need a quiver, crossbow, and some bolts to hunt, and you'll also need a butcher's workshop up early on for him to be useful. Don't bother bringing a butcher though, skill is pretty unimportant.

Is archer actually relevant if you're not using a bow?

Listen up: making a thing a ‼thing‼ doesn't make it more awesome or extreme.  It simply indicates the thing is on fire.  Get it right or look like a silly poser.

It's useful to keep a ‼torch‼ handy.

Yes.  It's the ranged version of the Fighter skill.

Personally I always embark with a hunter (assuming a non-evil biome).  5 points Ambusher, 2 Marksdwarf, 2 Archer, 1 Swimming.

The swimming is so that if your hunter dodges right into a murky pool/river, he's more likely to survive.

Your hunter will not start out with a crossbow or ammo.  Personally I just turn on the crossbow-making and woodcrafting labors for my hunter immediately after embarking, build the appropriate workshops, and have the hunter craft a crossbow and some bolts.  Once he's hunted a few things, another dwarf will start churning out bone bolts for the hunter to use.

crossbow also uses archer for a boost, while an archer would only use archer skill

Archer, ambusher, and marksdwarf skills for firing their crossbows. Armor user won't be that helpful since hunters wear very light leather armor. Dodger, hammerdwarf, fighter, and likely every unarmed combat skill will be used if their opponent charges and drags them into a melee fight.

The dwarfiest hunters use Magma and Battleaxes while hunting.

Just throwing that out there.

Wrong - a bow-user uses the Bowman skill (along with Archer), while a crossbow-user users the Crossbowman skill (along with Archer). Similarly, a blowgun-user uses the Blowgunman skill (along with Archer), and Throwing (in Adventurer mode) uses the Thrower skill (again, along with Archer).

P.S. If you don't get this note, let me know and I'll write you another.
It's amazing how dwarves can make a stack of bones completely waterproof and magmaproof.
It's amazing how they can make an entire floodgate out of the bones of 2 cats.

There is a different skill for 'archer'(I guess you mean bowman). 'Bowman' skill works as 'crossbowman' skill if using a bow. And 'blowgunner' skill if using a blowgun. 'Archer' skill is used by all range weapons. 'Bowyer' skill is totally different than 'bowman', it is used when making a bow or crossbow.

EDIT: Ignore me, same as Quietust said.

I've got some inquiries on Hunting Dogs.  Do Hunting dogs help conserve a Hunters footfalls?  Like by retrieving, spotting prey, or tracking directly to game fields, instead of looping in from an curved path?

What seems like odd behavior?  I wanna know, why this Hunting dog assigned to a Hunter, just ran back to the pen activity zone where he was trained to hunt with his favorite chew toy.  He departed the side of my hunter as he was sleeping in the field, midway thru a gander slaying shootout?

This pooch has been released from the pen for atleast 15 minutes of realtime gameplay now.  So why did he run back?  To plant a wet one, kiss, on the other dogs in the pen, to sniff some ass, to bury a bone?  Hmm.  Odd.
