I remember playing Uncharted Waters: New Horizons on the SNES and earning so much gold through a particularly broken trade route that I basically bought out every single port in the game. In the name of Holland. All other countries were powerless before our Dutch might.

Dwarf Fortress. You can forge your own, with a different facing each year. Also make handy ranged weaponry.

Of course then I had the 'other' vault with the world treasures... -twitch- okay I have to play this game again over the weekend.

Though in DF my real treasures are teeth, fingers and other assorted bodyparts my military has carved from the enemy, bags of coin seem slightly low brow when my line of thinking runs:  'Hospital?  Line it with platinum, useless crap, apart from the operating tables, make then from this giant pile of gold.  Then cram gems in on everything, it will piss of the neighbors'

Fable 3's snowballiness of renting out places is hilarious.

Once you buy enough property you start earning tens of thousands of gold every five minutes which you can then use to buy more property to earn more gold to buy more property and so on.

I currently own about 75% of the game's only city. I'd say if you own every single building in the game with rent or prices maxed, you'd probably earn one or two hundred thousand every tick of rent, which is five minutes. The 360's clock keeps the gold going, so you can log in one day to find an entirely full personal vault, give it all to the kingdom's treasury, log off and come back the next day to find your personal vault entirely full again.

Dungeon Keeper. You had literal piles of treasure that you could pick up and shower deserving minions with, or lock away so noone got payed. There was nothing more satisfying than finding a seam of gems and setting 10 high level imps to just mine you so much gold that you'd have nowhere to put it.

Fallout 1 and 2.

Fallout 1 coins were kinda special tho.

Most games from the Might and Magic series (The RPG not TBS). I remember abusing "enchant item" to get more and more monies (i also loved that you could play TCGs in taverns and brew your own potions).

Two Worlds 2 has a built in village menagement game (and a ton of other things to help customize your hero).

Overlord had you fill your treasury with "apropriated goods" and "due rewards" IIRC. You could also use the money to make your evil tower of doomy dooms look more royal and doomy.

Dragon's Dogma has an item that lets you use coins as a weapon.

I never used it, but it sounded entertaining.

Dungeon keeper, Evil genius and Overlord (like others already mentioned) all have visual piles of coin and gold lying around.

If you want more mount & blade I think the new version of the Prophesy of pendor mod (3.5) should be out any day soon. They added a little more things to spend your coin on compared to the original game.

Perhaps trading games like patrician or port royale would work? You're a merchant and run ships around to buy and sell goods and amass as much wealth as you can.

There's also The guild 2 I guess. Although I don't remember which one of the expansions and stuff was less buggy than the others. Although I think it was mostly multiplayer problems.

Whenever I play Elona I end up grabbing everything not nailed down and collecting all kinds of random things I'll never get around to actually use.

In the first Neverwinter Nights, you do get to do the inventory gold thing, IIRC. There's also some sling bullets (possibly in an expansion pack?) that are ostensibly just enchanted gold coins, unfortunately you can't use regular coins as weapons. In my tabletop DnD games, that was always an option.
