I've got a quest to kill some olm man dude hiding out in a town's sewers. I tried to access them rough the dungeons in the castle, but those were a dead end. I also found some dungeon-type thingy under a temple, but I couldn't explore it because a mummy chased me out. Is there any way to get into the sewers? I'm seeing 'sewer access' markers on the travel map, but they seem to only indicate grates. I know there are occasionally drainage pipes into nearby rivers, but I'm pretty sure you need to breathe underwater/not breathe at all to get through and I'm not ready to vamp myself yet (need to work up those stats, yo).

In my experience, when you get "animal that breaths underwater"-man quests they wil be deep inside the river tunnels behind another group of amphibian animal men (that has their own boss).

So unless you can breath underwater or use dfhack to reveal the map and take control of them and drag them out to fight you, or they happen to be close enough to the river that you can swim inside and lure them out before you drown, its pointless to try finding them.

I usually resolve this situation by raw-editing the animalman species in question to melt, and then walking around the city until the death appears in the quest log.

How would one go about doing that?

The 'sewer access' points are usually hidden around behind buildings. Find one on the map and start hunting.

Also, be careful not to get lost and/or bored in the sewers.
