How do you get gasoline?  I've got a nice pickup truck at a filling station and can't figure out how to really utilize it!

Find a fuel can. Siphon into it inside the gas station.

You need to find a fuel can, equip it, then siphon gas into it. As long as you have a gas can (with gas) in your inventory, the fuel is automatically taken from the can when you're driving.
To siphon gas into the can you need to click the can once its equipt then click siphon.

As for combat taking a while, guns and decent melee weapons do far more damage. The highest ive seen so far is 199-300 damage per hit, which if i remember correctly was a Steyr AUG rifle. I've only found 3 guns so far and im sure there are more powerful ones out there.

One of the only things that drew me to the game was vehicles, and it turns out they're essentially impossible for anyone to use?  With fuel cans being that rare, and vehicles unable to pump gas from the station, then vehicles become pointless.

Hardly, man.
You can occasionally find a vehicle with a decent amount of gas in it. The first time i searched a filling station i found a gas can, too. Besides, Gas is often traded and shared between players. Its quite the commodity, really. Access to a working vehicle is a huge advantage so it makes sense you cant use without effort.
