Simple.

You have a cat vampire on the loose. It is feeding on its kin.
Cats are already tantrum causing menaces that kill people (how many times has vermin remains been left in a crucial door hey?) A vampire cat just gives you a legitimate Another reason to kill it  ;)

Explosive headbump.

I'll go with this, they ran at each other at full speed, collided and exploded throughout the fort leaving mutilated kitty corpses and blood streaks everywhere.

Seriousness:  Sounds like a syndrome since there are no reports.  Anything from falling to getting bashed on the head with a toothpick gives a report, so something should've come up if a monster or any other force of nature ripped apart the useless furballs cute kitties.

It's possible you have wild animals attacking them or that they're getting hit with constructions but if you have alot of animals just chilling out in the dining hall they may be fighting.

This sounds like a syndrome to me.  Either evil rains/mist/dust from the surface, or else some bit of FB contaminant that isn't affecting your dwarfs because they have footgear.  Uncontrolled bleeding is a fairly common syndrome effect.

I've had episodes of Mysterious Cat Death in several fortresses over the years and it's almost always been due to an uncleaned patch of FB contaminant.

Syndromes do not "tear cats apart" as the OP reported, although some of the cat deaths may be attributable to them. However, minecarts are the most likely culprit here, as others have suggested.

Besides minecarts, syndromes, crowded animals, or falling objects, I'd like to suggest another possibility.  Do you have a danger room in use?  If so, the cats may have snuck in and gotten struck by the training spears.

At this point though, I'd put my money on the syndrome.

Better not slack in the footwear industry!

Personally, I'd leave a thank you note to the cat murderer for making your life that much easier, and get on with actual important things. Like murdering things.

Well, It is now almost certainly the syndrome. I accidently flooded my fort, and I notice the a pile of the Forgotten Beast's blood is pooling from earlier, annd now I notice the same "cat bleed to death", And a duck died too. The Dwarves were fine, in case you were wondering.
