Cutting my ties with the outside world...

I wanna get this done. What steps shall I take and what would the drawbacks be? And would the traders get angry with me if I just leave them outside?

nah, they don't come if you have no accessible trade depot. And if you have one but do not trade, the merchants won't do anything, the diplomats on the other hand...

Yes, they do.  They just don't send wagons.  You still get merchants with pack animals, who hang around for a while and then either leave or go insane.

No.  The dwarves will never declare war on you, ever.  The humans might, but you need to kill their diplomat for that to happen.  You won't get a diplomat unless you have a baron/duke/count/whatever, so you might not ever need to worry about that.

I haven't had it happen in one of my fortresses, but from what I've read I believe a loyalty cascade happens when you order your dwarfs to kill the members of a dwarven caravan. They become enemies to dwarven civilization, but remain members of dwarven civilization at the same time. Thus, they will continue to go about their day, living and working and obeying orders, but they will be attacked on sight by any other dwarfs that see them. Any dwarfs that attack them will also become afflicted by the same problem - causing a civil war.

A creature that attacks a member of a civilization, or a group, is declared an enemy of that civilization/group. An enemy tries to kill every member of a civ/group that they see, and the members try to kill their enemies that they see. The members of the dwarf caravan are members of your civilization.

A "loyalty cascade" begins when you order your soldiers to kill the dwarf caravan. This results in the soldiers becoming enemies of your civilization, but they remain members of your group. Since they're enemies of your civilization, they'll attack your normal citizens. Anyone who attacks these soldiers become enemies of your group (but remain members of your civilization), so thereafter they'll attack your normal citizens, too. Eventually, if this is allowed to continue, your fort will devolve into 2 armed camps, one consisting of members of your civilization that are also enemies of your group, and the other consisting of members of your group that are also enemies of your civilization. The groups will attack members of the other group and any unaffiliated dwarves; unaffiliated dwarves that survive an attack become members of the group that didn't attack them.

To the OP: traders may go insane after a while if they can't leave the map. Dunno if they can turn back without being to your trade depot.

Can you build a wall around the entire map? I know this would take a big effort, but seems like it would keep people out.

You can't build walls on the map edges. You can, however, build drawbridges, link them to a lever, and then pull the lever to raise the bridges, sealing the edges. This will also prevent any surface animals from appearing, however. I've not done it since the introduction of caverns, so it might, but probably won't, shunt the entry of civilized visitors down to the caverns; I don't know for sure whether it does or not.

I recently ran a fort where I did not build a trade depot.  Traders remained on the edge of the map.  Eventually they went mad.

The alternatives are all inferior and more work or don't accomplish the goal at all. You can either make and raise map-edge drawbridges to totally and truly seal them, you can dump magma and water on the map edge simultaneously to obsidianize them and truly seal the map edges, you have a constant supply of magma flooding every edge of the map, or you have a channel and/or walls a few tiles off the edge itself, which allows things to spawn. If you want to have no contact with the outside world at all, you use raised map-edge drawbridges. No other alternative is practical or effective.

I should mention that you can remove ramps on the map edges by constructing floors on top of them, too. If your map isn't perfectly flat, this technique, which isn't necessarily obvious, is needed for a seal.

I was just thinking of just walling up my fort when I meant "Cutting my ties with the outside world..."

Would that not work?
