What are they, where can I find them, and what should I be afraid of?

Underground area under a temple is called catacombs. Tons of bandits there, sometimes monsters (I killed a cave dragon there once). Taking items from forts, keeps, catacombs and warehouses is okay.

No mention of the mummy? There's always at least one in the catacombs. If you find especially valuable items laying amongst traps, you're close.

I've found catacombs without mummies. Sure you're not thinking of tombs?

I'm positive I'm not thinking of tombs. I'm talking about the basements beneath temples and sometimes keeps, where you find loads of bodies and coffins. If you don't see those, you aren't in the catacombs. I've found five mummies in one of them, and the only time I didn't find even one it was under the monastery instead.

I've seen a fair few catacombs without mummies. I think it's only tombs that will always have mummies.

Maybe it's the size of my world. Only law-givers or lords who lived in that keep and died peacefully will become mummies, the rest go into communal coffin chambers, and law-givers and lords who lived and died peacefully in keeps outside of towns go into tombs. Because of the size and duration of my world, most civilizations didn't come into conflicts at least until late in the first to middle fourth century, giving time for at least one town leader to die in peace. After that, they're all replaced by vampires, who don't die peacefully if at all.

I found a smooth kimberlite floor with detailed shale pillars around it. What is that? Is it any use?
(There was a high knight or something there but I took his head off with one blow)

If he wasn't already aggressive then you're going to be very unwelcome in that region. You know, you can use the Fast Travel map to get details on buildings around you. I would guess that if you'd checked that map you would've seen the place name in light blue. If there are doors in the basement leading in cardinal directions, that's where the catacombs should be, but now anyone who might care what you're doing down there will want you buried there instead.

catacombs can contain mummies sometimes but i usually have both my legs ripped off from traps before i make it to them

Not all Catacombs have Mummy's, but some do. Generally, if you see a lone coffin in a room surrounded by corpses; you should stay away from it, and if you have Companions, just turn around and walk in the other direction (they can wake up Mummy's).

Generally speaking, if you can talk to something, it isn't hostile. Or if you have to press Alt+Y to initiate an attack. If you had to do those then you just attacked a friendly, or at least a neutral target.

If we're calling  the stretch of corridors under a keep catacombs

There was a super goblin under mine. dodge skill like jesus and was punching the crap out of my companion..

I was eventually taken out. I figured it was a jail break.

Under the keep is the dungeon; that's what they call it if you get a quest for someone there. Sometimes the catacombs and dungeons are connected, and I've once seen catacombs connected to dungeon but not the temple.
