note that they claim rooms that are assigned as bedooms by themself, no need to assign everything to them by hand

Also note that dwarves do not release claimed bedrooms when you assign them a new bedroom. This can be a problem with nobles. Although you've given them fancy new digs, they still own that rat hole they claimed before they became nobles, and they will still sleep there, and then complain about having a crappy bedroom, and how utterly mortified they are that some commoner has a nicer room than they do.

Does creating a dormitory and then assigning individual beds out to dwarfs still count as having their own bedroom?

I guess yes, you an only assign a bed if you make it a room.
