the only weapons i sold where stone tipped arrows and some bolts. And socks.

Edit: How is it possible that this fort lived so long without needing a single piece of wood?
The Wood stockpile is outside the Inside burrow and i couldn't make training bolts because of that.

And what lever does what?

There is (was?) an early, small wood stockpile near the first mason/carpenter workshops from the first year, it's possible that supplied a small, but steady amount of wood for the workshops.

There are two levers in a small room just west of the dining hall. The room itself was labeled with a "Note", but the individual levers might not be.  As of one year ago there were two levers; The one closer to the center of the room controls the inner-keep's gate.  The one in the "4'oclock" position at the outside of the room controls a bridge at about the "4'oclock" position of the moat that encloses the outer courtyard.

If that doesn't answer your question then maybe post a screenshot of the levers you're asking about?

And i'm mining a Wood stockpile beneath the workshops.

I also got fungiwood growing in one of the farm plots, forgot to mention that, so you can get a bit that way if you use the timberyard  a little bit.

That is because you have "Evil Elves" turned on. It causes an elven civ that automatically attacks you. You probably will see Chaos Dwarves, Deep Drow, and Human Bandits as well. All of those are identical to the other races, but they have the [BABYSNATCHER] tag, which means that they will automatically be at war with everyone. If you can beat ordinary Drow/Humans/Elves, these won't be a problem. I have never fought chaos dwarves before, though. Please report if you find any!

I turned them on when I made the world (heh) and they existed when I picked the site I think, so we should see them.

The evil versions of the normal races always seem to come late though, I had a ten year fort and they only showed up after something like 6-7 years. Well, except for the thieves.

Another reason to not kick out the mayor is the ease of meeting mandates, the only thing she asked me to do during my year was to not export crowns and bins I think. Done.

It's strange how this thing played out. Most of the officers are down, summer will be interesting... oh, and my dwarf somehow dual-wields a zweihander and a longsword, both of them made of mithril. That's cool and all, he's a brute like that, but I don't think that's supposed to be possible.
I didn't kick the mayor out because among all these other villas, I found my old rooms to be... substandard. I'm building something far bigger and far more ridiculously fabulous this time. Oh and I didn't check the mandates, and sold a few bins actually. Then Zen Jr went ahead and beat up a miner for violating a production order. Lucky for everyone, the miner was tough as hell (as miners are expected to be), and Zen Jr is still a pussy, so no real harm done, just a few bruises.
The tower is coming along nicely, I finished the floor you started, built the walls of the next one, and then the ambush hit, so it's postponed, at least until I get everyone and everything back inside. It's a bit of a mess out there now, I'll clean it up tomorrow.

Btw, you are not dead. Yet.

Cool.  Yeah I think if dwarves are really big, or strong, or something, they can 1-hand wield a zweihander.  I've seen it once or twice before.  Just like even in vanilla you sometimes see a weak dwarf who has to dualgrasp a mace.
