vanishing wildlife

started a new fortress recently, and it seemed to be in a pretty wild environment. The first few years I had many deer, moose, wolves and bears wandering through, which trained up my marksdwarves and butchers rather nicely, but then suddenly, they all stopped spawning. It's like how you eventually run out of fish stock in a murky pool by overfishing. Can you overhunt?

Yes. You made them ALL die off, no more moose, deer, wolves, or bears for awhile, IF any are still alive.

always let a few wander off the map. Though you must have been hunting a lot to kill off all the local wildlife

Yeah, I've had the same thing. Only Peregrine Falcons, which my hunters can't catch.
