I would say Towns and Gnomoria are both very much DF-like. Certainly simplified versions without the emergent behavior.

Still, you got minecraft, terraria, ace of spades, infiniminer...

Hell, even an android app made for viewing minecraft worlds.

What does Minecraft has to do with DF, except the sandbox environment?

Absolutely nothing.  But according to lore, Notch began making MC as "DF in 3D" but then just made his own game instead.  Or some may say "He made Infiniminer 2.0 instead" but that's another argument.

Really, the poor genre system lumps anything with block-based terrain into the same genre.  That's why you often see Terraria and DF put together.

Well, I'm not sure if this helps you or not...but have you tried the Masterwork mod for DF? I'm sure its pretty well known, since its just in a different section. It does simplify item names (and gains a FPS increase), allows hotkeys and adds a ton of stuff.

To be honest, I just can't play other similar games after. The mod just makes DF feel finished and great.

But if you do still want something more simple...I would go with Towns. The developers for it are great, and I'm glad to have supported them. It is kind of like DF, with a mix of some other games.

Towns is a bit like DF crossed with Dungeon Keeper. A very fun little game, although it could really use 1 or 2 DF features. Professions in particular would make a huge improvement, currently the game "priority" system pretty much just results in everyone doing the same thing at the same time.
