simple: All your butchers are in the millatery, the floor around the butcher shop is carpeted in weapon traps -reanimation triggers the trap- and the chute is optional.

This is true, mind, its rather hard to find a way to desensitize dwarves when the kitten bomb results in zombies and tantrum spirals.
